Brinjal (Eggplant) Wedges


2 big brinjals (the type you use for baingan bharta)
2 tsp coriander powder
1 tsp cumin powder
1 tsp red chilli powder
1/2 tsp garam masala powder
1/2 tsp dry mango powder
salt to taste


Wash and cut the brinjals into 4 big wedges
Make a thick paste of  the dry masalas with a little oil and water
Apply the paste to the wedges
Heat oil in a big kadhai / wok and place the wedges in the oil.
Cover and cook on sim till done.
Sprinkle a little lemon juice just before taking off heat.
