Roast Chicken Stuffed with Brown Rice


1 whole chicken – 1200 to 1500 gms
1 cup of brown rice (cooked)
1 carrot
1 green pepper
1 red pepper
1 yellow pepper
200 gms button mushrooms
100 gms french beans
1 big onion

Make a marinade of
3 tbsp Soya sauce
Juice of one lime
1 tbsp Ginger garlic paste
Salt and pepper to taste
1 tsp red chilli powder
1 tsp chilli flakes

Rub the marinade well into the chicken in the cavity and under the skin and leave to stand about an hour.

Add into the cooked rice onion slices and finely chopped veggies.  Stuff this mix into the chicken cavity and place in a foil lined baking dish.  Extra rice can be spread around the chicken.

Preheat the over to 200 deg. Cover the chicken with foil and bake for an hour.  Remove the cover and grill for 10 mins.

Ready to plate.
