Whole Wheat Coffee Cake – In a Jiffy

Ingredients

200 gms whole wheat flour
200 gms sugar
200 gms butter
4 eggs
2 tsp milk
1 tbsp coffee powder (granulated is better)
1 tsp baking powder
1 tsp vanilla essence

Method

Powder the sugar in a grinder
To that add the butter and blend together
Add the eggs into this mix and blend well
Sift together the baking powder and flour
Add the sugar-butter-egg mix to the flour and mix well with a spatula
Add the vanilla essence
Blend with a hand blender for about 5 minutes
Add in the coffee and mix in with the spatula
Put the mix into a greased glass baking tray
Bake in the microwave, in microwave mode for about 5 mins
Remove the tray and check the bottom. If the cake is still moist, microwave for another minute or so.
Cake is ready to serve.
