Cauliflower Rice – Quick & Easy

500 gms cauliflower
1 bunch of spring onions
1 Tomato
4 cloves of garlic
2 green chillies
1/2 tsp tumeric powder
Juice of half a small lemon
A handful of coriander leaves

Wash and break the cauliflower into florets.
Whiz it in the blender to break up – should look like semolina (rawa)
Slice the onion bulbs and saute with chopped garlic and slit green chilli
When transparent, add the chopped tomato and tumeric powder
Add the cauliflower when the tomato softens and saute briskly for  about 10 mins
Add  the lemon juice and chopped coriander leaves, mix well and its ready to serve.
