Stir-Fried Vegetables

Ingredients

500 gms mixed vegetables of your choice (recommended vegetables are broccoli, button mushrooms, french beans, carrots, baby corn, zucchini)
1 tsp chilli flakes
½  tsp black pepper powder
5 cloves of garlic
2 tbsp olive oil
Salt to taste

Method

Wash and cut the vegetables as desired (recommended – florets for broccoli, button mushrooms quartered, french beans sliced thin diagonally, carrots julienned, baby corn halved vertically, zucchini, halved vertically and cut into thin slices).
Heat oil in a shallow kadhai / wok and sauté the finely chopped garlic till slightly browning.
Add in the veggies one by one in order of cooking, stirring briskly.
Add the chilli flakes, pepper powder and salt and continue stirring briskly for about 5 minutes.
Crispy, healthy vegetable stir fry is ready to be served.
