Stuffed Egg Bake


5 eggs
2 large onions, diced into medium sized cubes
2 large tomatoes, diced diced into medium sized cubes
½ bell pepper (green or red), cut horizontally into three and then vertical slices.
2 breakfast sausages, cut into thin slices
3-4 strips of bacon, chopped roughly
2 green chillies, chopped
1 tsp Italian seasoning
1 tsp white pepper
3-4 tbsp milk
1 cheese cube, grated cheese
Salt to taste
Olive oil as required

Crisp the bacon and sausage slices separately in a pan with very little oil, and set aside.
In the same pan, add a little more oil and sauté the onions and green chilli till onions are transparent.
Add the tomatoes and and stir briskly till tomatoes are just beginning to break up.
Add the seasoning, salt and crisped sausage and bacon.
Mix in and turn off heat.
Whisk together the eggs, white pepper, milk and cheese with a little salt.
In a glass baking try, empty out the sautéed mixture and spread well.
Pour the egg mixture on top and spread evenly by tilting the tray.
Microwave for about 4 minutes.
Make slits in the bake and microwave two minutes.
Make slits once more and microwave another two minutes.
Cut into slices and serve hot with a cup of coffee or a glass of fresh fruit juice..
This should be enough for four servings.

      • Hi Veronica

        Baking in a regular over for about 30 mins @ 180 deg should do the job. You would however need to pierce thru the top layer twice or thrice during the baking so that the heat percolates evenly thru the depth of the pan.
        Do let me know the results.
