For the Masala Stuffing
Grind together coarsely :
6 green chillies
1 full medium size pod of garlic
1 tsp cumin seeds (jeera)
For the topping
1 medium onion
1 medium tomato
A handful of coriander leaves
Salt to taste
1 tsp olive oil
Remove the heads and make slits on the fish (four horizontal slits on both sides of the body is just right
In the ground masala mix, add juice of half a lime.
Rub this into the slits on the fish.
Cut fine the onion, tomato and coriander. Mix all this well with a little salt and the olive oil.
Place the masala stuffed fish individually in foil and put a thick layer of the onion mix on them.
Close the foil packets and bake in a pre heated oven at 200 deg for about 20 mins.
Keep in the closed oven itself for 10 mins after turning it off.
Ready to eat and deliciously yum.
Best served on a bed of buttered steamed rice.
