Goan Prawn Curry – Roasted Masala

500 gms medium size prawns, cleaned and deveined (the very big ones taste better in dry dishes)
1 onion, sliced fine
1 tomato, diced small
5 curry leaves
2 green chillies, chopped fine
1 tsp tumeric powder (haldi)
Salt to taste
Oil for frying
For Masala
All below ingredients to be roasted and ground to a fine paste
1/2 fresh coconut, grated
8 dry red chillies
1 small onion
6 flakes garlic
1/2″ ginger
1 tsp jeera
1/2 tsp khus-khus
3 tbsp dhania whole
2 pepper corns
1/2 tsp saunf
1 tsp tumeric powder (haldi)

To add to the roasted ingredients for masala, pulp of 1 small ball tamarind soaked in a little water

Apply salt and tumeric powder to the prawns and set aside.
I like to include the heads since they give a nice flavour to the curry.
Saute the onion with curry leaves and green chillies.
When browning, add the tomato and fry till oil leaves the sides.
Add the masala and fry well.
Add enough water and a little salt (since the prawns already have salt) and bring to a boil.
In the meanwhile wash the prawns well.
When the curry starts boiling add the prawns and boil on medium.
Add more salt if required.
Should take about 10 mins to get done.
Serve hot with steamed rice and onion salad.
