image Pickled Beets


3 beets diced into cubes
1 cup water
1/2 cup white vinegar
2 tablespoons sugar
1” cinnamon
3-4 whole cloves
Salt to taste salt


Add the beet pieces with salt in one cup of water.
Boil and reduce water to half.
Drain the beets into a medium bowl and reserve the juice.
Boil together vinegar, beet juice, sugar, cloves, cinnamon and little salt.
Simmer for about 15 minutes once this mixture is boiled.
Remove from heat, and pour mixture over the beets.
Toss until coated, and leave covered till cool.
Transfer to an air tight jar and chill.
Ready to use the next day.
Good to store and use in salads, etc.
