2 onions, roughly diced
2 tomatoes, roughly diced
12-15 kashmiri chillies
2 tbsp ginger garlic paste
2 tbsp garam masala powder
1 tbsp pepper powder
1/4 cup soya sauce
1/4 cup vinegar (I prefer the sugarcane one)
2 tbsp worcestershire sauce
Salt to taste
3 Green cardamon
1 star anise
Poke the meat with a fork randomly on all sides.
Mix all the marinade ingredients together and rub well into the whole beef cut.
Let the meat marinate for minimum 4-5 hours. Overnight is great.
Heat oil in a deep vessel.
Sauté the whole spices till they begin to crackle and the aroma is released.
Place the meat carefully in the oil.
Sear on high heat on all sides before covering and cooking on sim.
Keep turning from time to time.
Should be done in about an hour, or an hour and a half, depending on the cut of meat.
When the meat is cooked, remove the cover and turn up the heat so the juices thicken and coat the meat.
Cool and Refrigerate.
Cut into thin slices, across the grain, after it is well cooled in the fridge.
A versatile dish that can be had in a sandwich, as a side or as a main.
