500 gms penne, prepared as per instructions on the packet
6 cloves garlic, minced fine
A small piece of ginger, grated
3 green chillies, finely chopped
2 green capsicum
200 gms cabbage, finely chopped
3 carrots, thin small juliennes
3-4 tbsp tomato ketchup
1 tsp cumin (jeera) powder
1 tsp coriander (dhania) powder
1 tsp garam masala powder
1/2 tsp red chilli powder
Salt to taste
Oil, as required
Heat oil in a vessel and lightly saute the green chillies, ginger and garlic .
Next add in the carrot and after sauteeing for some time, the capsicum.
Vegetables should be cooked on high flame.
When the carrots are crisp, stir in the cabbage and then tomato with a little salt, and cook for another 2-3 minutes.
Add the dry masalas and stir in.
Add tomato sauce and mix really well.
Cook for few more minutes, adding more salt to the veg mix if needed.
Add in the cooked macaroni and toss.
Simmer the macaroni with vegetables for 2-3 minutes.
