2 carrots, cut into 2″ long wedges
100 gms french beans, thread removed and broken into 2″ pieces
3 medium potatoes, medium diced
1 small head of cauliflower, broken into florets
10 small onions (those used for sambar), peeled
2 green chillies, slit
1/2″ ginger, cut into slices
10-12 curry leaves
2 tsp pepper powder
100 gms coconut milk powder
Salt to taste
Boil all the vegetables with the chillies, ginger, curry leaves and salt till almost done.
Prepare thick coconut milk as per instructions on the coconut milk powder packet.
Add in the pepper powder and prepared coconut milk and bring to a boil.
Let the stew simmer for some time before turning off heat.
Serve hot with steamed rice or rice noodles.
