500 gms meat of your choice, diced into medium sized cubes (I used mutton)
3 big onions, cut fine
1/4 tsp turmeric powder
15-20 curry leaves
4-5 garlic cloves
4-5 thin slices of ginger
3 green chillies, sliced
4 medium potatoes (peeled and cut into halves) – optional
Coriander to garnish
Salt to taste
Oil & Water as required
For the masala, grind to a fine paste
10 kashmiri chillies
8 cloves garlic
1/2 tsp cumin seeds
2 green cardamoms
1 star anise
1/2 tsp poppy seeds
2 tbsp coriander seeds
Heat oil in a pressure cooker and sauté garlic cloves, ginger slices, curry leaves and slit green chillies for some time.
Add the finely chopped onion and sauté till transparent and slightly browning.
Add the masala paste and fry well till oil separates.
Add the diced meat and fry well in the masala paste.
Add required quantity of water for the gravy.
Cover the pressure cooker and cook on high flame till the first whistle.
Simmer and cook for another 15-20 minutes, depending on the meat you are using.
Open the lid and add the potatoes.
Close and cook for another two whistles.
Open the lid and garnish with chopped coriander.
Serve hot with rotis or rice.
