1 cup uncooked rice
(kolam works well)
1 medium onion, sliced fine
2 green cardamoms
1 star anise
2 bay leaves
Juice of half a lime
Salt to taste
Oil & water as required
Masala, to grind to a fine paste
8 garlic cloves
2-3 green chillies
1 cup mint leaves
A handful of coriander leaves
Wash the rice well and keep soaking in water for at least 15 mins.
Heat oil in a vessel and drop in the whole garam masala and bay leaves.
Add the onion and saute till transparent.
To this, add the ground masala and fry well.
When the oil starts separating, drain the uncooked rice and add to the masala.
Mix the rice well and then add water to cook (double the quantity of rice is recommended).
Add salt and bring to a boil.
When water is almost dry, just a thin layer remains at the top, add the lime juice and mix in.
Cover and cook till done.
*Vegetables can be added to make a mint pulao if so desired.
