500 gms pasta of your choice, prepared as per instructions on packet
6 cloves of garlic
1 onion, finely chopped
1 tbsp butter
1 tbsp white pepper
½ tbsp chilli flakes
1 – 1.5 cups milk
¼ cup shredded cheese (optional)
Salt to taste
Dice the carrot and potato and boil with the garlic and salt.
Water should just cover the vegetables.
Cool a little and puree smooth in the blender.
In a heavy bottom vessel, melt the butter and sauté the onion till transparent.
Add the puree with the pepper and chilli flakes and sauté a bit more.
Add the milk depending on the consistency of sauce that you require.
Add the cheese (if using) and heat till the cheese is fully incorporated in the sauce.
If you are not using cheese, heat till the puree starts bubbling slightly.
Add the pasta and mix well into the sauce till the pasta is well coated.
