1 big brinjal, cut into medium thick slices
1 lime, juiced
1.5 tsp garam masala powder
1 tsp red chilli powder
1 tbsp coriander powder
1 tsp cumin powder
1/2 tsp dry mango powder
1/2 tsp tumeric powder
Salt to taste
Oil, as required
Apply the lime juice and a little salt to the brinjal slices and set aside for about 10 minutes.
Mix all the dry masalas and a little salt.
Add one tsp oil and enough water to make a thick, but easily spreading, paste.
Apply the masala paste to the brinjal slices, coating well on both sides.
Heat oil in an open flat pan and reduce the heat to half.
Fry the slices well on reduced heat, turning from time to time, till the brinjal is cooked.
Sprinkle with chaat masala and serve.
