500 gms tilapia (chilapi) – about 4 medium size fish
5 green chillies
12 cloves garlic
1/2 tsp pepper powder
1/2 tsp cumin powder
1 tsp coriander powder
1/4 tsp tumeric powder
3-4 tbsp lemon juice
Rice flour for dusting
Salt to taste
Oil for frying
Remove scales of the fish and clean out the gills and stomach.
You can remove the head portion or keep it if you wish. I remove it for frying.
Salt the fish and set aside for at least 20 minutes.
Grind together the chillies and garlic fine, but not smooth.
Make a paste with the dry masalas, chilli-garlic mix, a pinch of salt and lemon juice.
Wash the fish well and make 2 slits on either side of the body.
Rub the paste into the slits and onto the body of the fish.
Set aside for some time.
Heat oil in a pan.
Dust rice flour over the fish and shallow fry on both sides till skin is crisp and fish is done.
