Mexican Style Vegetable Pulao

3 cups ricepulao
1 red bell pepper
1 yellow bell pepper
4 tomatoes
10 cloves garlic
1/2″ ginger
8 dry red chillies
3 onions
2 carrots
1 cup peas
200 gms french beans
Salt to taste
Oil as required
Optional: 2 soup cubes

Wash the rice well and soak for about 30 minutes
Cut up the bell peppers, tomatoes, garlic and ginger.
Heat a vessel and with very little oil fry all the above on with the red chillies till starting to char.
Remove from heat, cool and grind to a fine paste.
Julienne the carrots and french beans.
Parboil the peas.
Cut the onions into thin slices.
Heat a little oil in the same vessel and fry the onion till transparent.
Add in the ground paste and fry for some time.
Mix in the vegetables and fry till oil separates.
Drain the rice completely and fry in this paste till well coated.
When rice starts to glisten, add 6 cups of water, soup cubes (if using) and salt to taste.
Boil on high heat till water is almost dry.
Cover and simmer till rice is completely cooked.
