Layered Rice Bake

Ingredientslayered rice bake
3 cups cooked white rice
200 gms brocolli, broken into florets *
200 gms button mushrooms, quartered *
2 onions, sliced thin
6-8 cloves garlic,  peeled and halved
3 chicken frankfurter sausages **
3 pork frankfurter sausages (can add more chicken in place of pork) **
3 slices bacon (optional) **
1 cup tomato sauce (approx)
Chilli sauce, if desired, as per taste
1/2 tsp dried parsley
1 tsp chilli flakes
1 tsp white pepper
6 cheese slices
4 tbsp butter (approx)
Salt to taste
Halve the rice quantity.
Leave one half white.  In the other half,  mix in half to three-quarter cup tomato sauce (depending on taste), chilli sauce if using, and parsley.
Heat about 2 tbsp of butter in a pan and sautee the onions and garlic.
Add the brocolli and mushrooms and sautee for sometime till the mushroom is almost cooked.
Remove to a baking pan.
Chop the sausage (and bacon if using) and sautee.
Stir in pepper and about 1/4 cup tomato sauce.
Layer the white rice over the vegetables in the baking pan.
Then add the layer of sausages.
Over that spread the tomato sauce infused rice.
Melt and cool about 2 tbsp butter and pour over the rice.
Bake in a pre heated oven at 180 deg for about 10 minutes.
Break up the cheese slices and spread over the casserole.
Bake for another 5-10 minutes for the cheese to bubble and melt over the top and then grill for about 5 minutes for browning.
* Vegetables used are only an indicator. Any vegetable used for stir fry can be added as per taste.
** Vegetarians can skip the sausage.
