Masala Stuffed Okra (Bhindi / Bhendi)

Masala Stuffed Okra BhendiIngredients
500 gms fresh tender okra
1 cup groundnuts (approx)
1 tbsp red chilli powder (or more according to taste)
5 cloves garlic
1/2 tsp asafoetida powder (hing)
1/2 tsp dry mango powder (amchur)
6 curry leaves
Salt to taste
Oil as required
Wash and dry the okra.
Cut off the heads and slit the okra along the length.
Sprinkle salt, toss, and keep aside.
Coarsely grind the garlic and groundnuts together.
Add the chilli powder and a little salt to this and mix well.
Stuff this mixture into the slit okra.
In a pan heat a little extra oil and temper the curry leaves and asafoetida powder.
Add the okra and cook open,  stirring from time to time.
Sprinkle with dry mango powder and serve.
Excellent as a side with rice and dal / sambar.
