Chicken Chilli Fry

Chicken Kathi RollIngredients
400 gms boneless chicken (preferably breast)

3 big onions, sliced fine
3 medium tomatoes, diced
8 cloves garlic, minced
1/2″ ginger, minced
5 green chillies, chopped fine
1/2 tsp red chilli powder
1/2 tsp pepper
1 tsp white vinegar
Coriander for granishing
Salt to taste
Oil as required
Wash and cut the chicken into thin strips, about an inch long.
Heat some oil in a pan and sear the chicken stirring briskly, about a minute or two.
Remove from the pan and add a little more oil.
Saute the ginger, garlic and chillies.
Add the onions and salt and saute till transparent.
Stir in the chilli and pepper powder.
Add the tomatoes and fry till soft.
Add the chicken and mix well.
Cook for about 5-7 minutes.
Add the vinegar and coriander and stir.
Good to eat as a side with rice or roti.
For rolls, layer a roti or chapati with tomato ketchup, mint chutney or mayonnaise spread some of the chicken stuffing in a line towards the centre of the roti / chapati and roll.
