Sheer Khurma

sheer khurmaIngredients
1 ltr whole milk
1 tin condensed milk
6-7 dry dates
2 tsp charoli (chironji nuts))
3 tbsp sugar
1 cup vermicelli (sevaiyan)
2 tbsp ghee or clarified butter
50 gms milk masala (I use Everest)
1 cup crushed dry fruits (almonds, pistachio and cashew)
A few strands of kesar (saffron)
Method
Deseed and soak dates in warm water till soft, around 2-3 hours.
Cut into inty cubes.
Bring milk to a boil in a heavy bottomed vessel and simmer.
Thicken on low flame for about 30 minutes, stirring from time to time to prevent it sticking to the bottom of the vessel.
Add the dates, milk masala, sugar and condensed milk and stir till the sugar is completely dissolved.
In a separate vessel heat the ghee and lightly roast the charoli.
Add vermicelli and saute on medium heat for just a minute or two .
Add this to the milk mixture and cook for about 10-12 minutes.
Add the dry fruits and cook for 5 minutes more.
Best had warm.
